Butterflies, Thoughts and Chicken Parmesan Recipe

I was watching Dr. Oz (doctoroz.com) last week and he had two spiritual authors on. One was Gabrielle Bernstein and the other was Rebecca Rosen. Gabrielle told the audience that all they had to do was ask for a sign and Spirit would provide it. She proceeded to tell a story about buying a house and she asked for a sign from Spirit to make sure she was on the right path. She asked to see owls and she kept seeing owls everywhere.

Life has been throwing us some challenges lately, the deaf dog, the retirement fears that we aren’t having, will it all be ok. So, one night after my prayers, I decided to ask for a sign that it would be ok. I asked for butterflies. The next day I was on the front porch watching the dogs play and a yellow butterfly went by and I watched him go by and I thanked Spirit for answering me. Then another and another, there were 5 of 6 in maybe 10 minutes. I went to the backyard where Roy was working in his workshop. I was standing in the door keeping an eye on the dogs and a large butterfly started coming in the door and I told him “Don’t come in here” and he turned around. I then told Roy what I had done and he didn’t look at me like I lost my mind. It is so nice to be married to someone who believes as I do.

The next day we took Belle to the vet to get spayed and as we went in the door there was a butterfly in the plant by the door. I know some will say I am purposely looking for them, that is why I am seeing them everywhere. Truth is I am seeing them because Spirit is pointing them out to me.

I was going to go on about having a deaf dog but something more important is on my mind right now. Yes, Belle is a deaf dog and now that I know it makes it easier to train her.

I have a friend, I met on the internet through a website called iVillage. iVillage was supposed to be a great place for women from all over to meet and talk about women issues. I have met many wonderful and strong women on many of the boards. I also met many men there. Some were really great guys but most were there to pick up women. I am sure they started out there trying to learn how women think. The men all had great respect for women but the attractions were enticing and I know of a few marriages that fell apart from internet affairs. The guys in iVillage took the time to email you all day and they always made you feel beautiful and sexy, the things many women don’t get at home. I enjoyed my time on iVillage, some would say way too much.

One of my dear friends from iVillage and the only one I still communicate with had to have a kidney transplant  back in the day and she was doing really well. Recently,  she found out it is failing and it breaks my heart. She is going to have to go through the whole process all over again. I keep trying to figure out how I can make this better. Pray is all I can do from here.  From what I can tell, she was really starting to enjoy her life. She was traveling with her husband and seeing the country. She loves to travel and she has been doing just that.  For that I am happy for her.  I know her life has gotten better but I am sure there are many things she is holding inside like many of us women do.

Update on our Hurricane Matthew: we didn’t even get an inch of rain. I know many people were hit hard but here at the homestead, we were left wanting more rain. Prayers go out to those who got hit really hard and those who are still dealing with flood waters in North Carolina.

It’s been a crazy week here at the homestead.  Roy managed to work in his workshop and is a happy man, except he had to go back to work on Wednesday. He has to work this weekend and then there will be two.  The weekends are the worse but hopefully he won’t ever have to be gone another weekend. Fall is in the air but summer is trying to come back. We are headed to 90 degrees today.

Roy and I hit our high weights a few weeks back and we drew a line, time to get it off. We picked a starting date and off we went. Yes we have both had our cheats..him his beer, me I have taken to chocolate. I will say after 4 weeks we are doing well. It’s coming off, more slowly for me then him. The other night I made a dinner of Chicken Parmesan without flour and it was really good. I know, unbelievable. dinnerRecipe:

  • Olive oil-3 table spoons
  • 5 chicken thighs (because they taste good)
  • Kraft Parmesan Cheese-2 cups
  • Jar Sauce -half a jar
  • Olive Muffalata-2 table spoons
  • Grated Mozzarella

 

  • Preheat oven to 375.
  • Heat the olive oil in a fry pan. Wash the chicken and pat most the water off. Coat the chicken in the Parmesan cheese and cook in the olive oil. Turn when slightly brown. Place cooked chicken in a baking dish.
  • Heat sauce and Muffalata together.
  • Pour over chicken
  • Cover with Mozzarella  and bake for 35 minutes or until cheese browns.

Serve with a nice salad. Enjoy!
